Vegan Chocolate Cake

 

This simple and healthy cake can be enjoyed by vegans, or not. You’ll love it!

Ingredients

3 cups all-purpose flour (or rice flour, or barley flour)

2/3 cup unsweetened cocoa powder

2 cups sugar

2 teaspoons baking soda

1 teaspoon sea salt

2 cups cold water

½ cups + 2 tablespoons sunflower oil

1 teaspoon vanilla

2 tablespoons distilled white vinegar

1 cup chocolate chips (optional: include nuts of your preference)

Preparation

In a bowl mix flour, cocoa, baking soda, sugar, and salt.

In a separate bowl mix water, oil, vanilla, and vinegar.

Whisk together wet and dry ingredients. To break up any lumps, pour the dough through a strainer and press them through.

Continue whisking until it is smooth. Add chocolate chips (and nuts, if you add).

Preheat the oven to 175°. Pour mixture into a greased pan, size 25, and bake for approximately 25 minutes or until you insert a toothpick and it comes out clean. Serves 8.
